Apple Cinnamon Cake

Last night the guv'nor and I were reminiscing about our travels abroad. We talked about coffee and cakes we used to enjoy as we'd have a very British elevensies. 

We both remembered a cake that had chunks of apple and cinnamon sugar through it. So this morning whilst the guv'nor was at work I made my version of this cake and I'd like to share it with you all.

Apple cinnamon cake

Cook time 30 minutes

Ingredients 
50g brown sugar
2g ground cinnamon 
135g white sugar
115g butter softened 
2 eggs
8ml vanilla extract 
190g self raising flour
8g baking powder
120ml milk
1 Apple peeled and chopped 

Method
1) preheat oven to 180c. Grease and flour a 9x5 inch loaf tin
2) mix brown sugar and cinnamon together in a bowl
3) beat white sugar and butter together in a bowl until smooth and creamy,beat in eggs 1 at a time. Add vanilla extract
4) sift flour and baking powder into creamed butter. Mix in the milk to give a smooth batter. Pour half the batter into the loaf tin, add half the apples and half the brown sugar mix. Lightly pat apples into the mixture. Pour remaining batter over the Apple layer, top with remaining apples and brown sugar, swirl brown sugar mix through apples
5) bake in preheated oven for 30 minutes 

Serve with whipped cream or natural yoghurt
