Left over Sunday roast vegetables

On Sunday chef daves household had a Sunday roast, this left me with the dilemma of what to do with the leftover vegetables and mashed potatoes. 

After a chat with the mo in law we decided that I would make Pan Fried Lambs Liver, bubble and squeak and an onion and bacon gravy. We chose lambs liver as it has a more subtle flavour to calves and pigs liver and at £0.85 to feed 3 adults was a good wholesome cheap meal.

And remember Lambs liver is rich in nutrients such as iron vitamins D,C, and B12.

So this is what I did:

Mix the mashed vegetables with the mashed potatoes 
Chop bacon and slice onion
Season lambs liver and dust with flour

1) in saucepan fry the bacon in a little oil until just browned add in onions and sweat until just browned add splash of balsamic vinegar this releases the sweetness from the onion . Once onions are nicely caramelised add a tbsp of plain flour and stir to make a roux add a crumbled stock cube and slowly stir in 1pint of boiling water. Leave to simmer on a low light.
2) in a frying pan add splash of oil and knob of butter ,when hot add in the mash and veg mix and leave to go brown and gnarly . Now mix the browned gnarly bits through the bubble and squeak and repeat until your favoured consistency.
3) in another frying pan fry lambs liver for 3 minutes on one side turn over and fry for another 2minutes the liver should still be pink inside but no blood.


The meal using the leftovers and a few store cupboard items cost £0.27p per person, you couldn't dine out for that
